You mean just delete this directory? Do I also need to also stop/remove any services?

Yes, you should just delete this directory. All services will be stoped automatically.

Sorry for the upcoming stupid question but would renaming the folder work if I decide to revive the files in the future?

Yes, you can rename /usr/local/ispmgr/ to other name for "backup" this data.
